Two military members from Davis-Monthan Air Force Base came to show News 4 Tucson how to make a dish, that airmen can learn in the base's new initiative,Cooking for Singles.
1 ½ cup soy sauce
¼ cup water
1 chopped white onion
1/8 cup Minced garlic
1 cup vinegar
½ cup Hot shot seasoning (more or less to taste)
1 can coconut milk
1 Cucumber (sliced)
4 cups jasmine rice (cooked)
In a medium to large pot on medium heat, combine garlic, onions, and ¼ cup water. While that’s going, take your chicken and rub hot shot seasoning onto each piece. Once done, add chicken to the pot and let it absorb the flavors for about 2 minutes; meanwhile shake or blend coconut milk (the fat sits on top in the can prior to shaking). After those two minutes are up, add your soy sauce, vinegar, and coconut milk. Stir and let it simmer for 20-30 minutes on medium heat. While you eagerly wait… wash the cucumber and peel around it conservatively (you want to leave some it), then slice it. Last but not least… plate your rice, kadun pika with a side of cucumber, and enjoy!
