Chef Mary Steiger from Gourmet Girls restaurant shows News 4 Tucson how to make breakfast skillet

 

Dish: Breakfast Skillet

Ingredients:

  • 2 large eggs
  • 1 cup cooked and diced baked potato
  • 1//3 cup each diced ham, mushrooms, onions and peppers
  • ¼ cup shredded cheddar cheese
  • 2 T cooking oil

Cooking Instructions: Heat oil in skillet over medium heat and fry potatoes until brown and crispy.  Add ham and vegetables and continue cooking until softened. Transfer to plate. Using same skillet cook eggs as desired on place on top potato mixture. Sprinkle with cheese and enjoy.
