Gourmet Girls Irish Soda Bread
Ingredients for dish
- 2 cups gluten free all purpose flour
- 3/8 cup white sugar
- ½ teaspoon salt
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon xanthan gum
- 1/8 cup shortening
- 1/8 cup butter at room temperature
- ¾ cup raisins
- ¾ cup buttermilk at room temperature
- 2 eggs at room temperature
Preheat oven to 350, grease two 5 inch round cake pans
stir together flour, sugar, salt, baking powder and soda and xanthan gum in large
bowl. Use a pastry cutter, cut in butter and shortening and stir in raisins.
In another bowl, whisk buttermilk and eggs together, lightly beat mixture into flour mixture. place the dough in prepared pans.
Bake in preheated oven 30 minutes until bread has risen and top is golden brown. cool for ten minutes, remove from pans and serve warm.
