News 4 Tucson Cooks: Calabacitas

In today’s News 4 Tucson’s Cooks, Chef Maria Mazon from Boca Tacos Y Tequila made “Calabacitas”.

Ingredients for dish:
4 zucchinis ( chopped in small pieces)
1/2 white onion ( chopped )
2 Grill Corn
1 cup of tomato pure
1 can of Evap milk
1 teaspoon of oregano
1/2 of cheese ( shredded Monterrey )
Salt pepper and garlic powder to taste
1 table spoon of butter
1 teaspoon of chipotle powder

Preparation Instructions:
In a medium pot put the butter to melt then add the onions and zucchini.
Once they are coated add the corn ( shucked).
Then add all the rest of the ingredients, mix well in a very low heat. Enjoy it as a side or a main dish.
