Ingredients for dish:

(Serves 4)

  • 2 lb Wild Boar Sausage
  • 1.5 lb Yukon Potatoes
  • 1 stick Butter
  • 12 oz Sauerkraut, Cooked in White Wine with little bay leave, Clove, peppercorn
  • 1 tablespoon Dijon Mustard
  • 2 tablespoon Apple Cider Vinegar
  • 1 Shalot
  • 1/8  cup Whole grain mustard
  • 1 pint Chicken stock
  • 1 pint Heavy cream
  • Salt
  • Black cracked pepper

Preparation Instructions:

Stampot

  1. Boil Potatoes till ‘fork’ tender
  2. Add Butter, apple cider, mustard and sauerkraut to potatoes
  3. Season with salt & black cracked pepper
  4. Sauce
  5. Sweat the shallots
  6. Add whole grain mustard and chicken stock, bring to a boil
  7. Reduce this by half
  8. Add heavy cream, bring to a boil.
  9. Remove from the heat.
  10. Season with Black Cracked Pepper
