In Monday’s News 4 Tucson Cooks, the Gourmet Girls with Chef Mary Steiger made Gluten-free Pfeffernusse Cookies.
Ingredients for dish:
½ Cup molasses
¼ Cup honey
¼ Cup shortening
¼ Cup butter
4 Cups gluten-free baking flour
2 Teaspoons Xanthan gum
¾ Cup white sugar
½ Cup brown sugar
1 ½ Teaspoon ground cardamom
1 Teaspoon each ground nutmeg, cloves, ginger
2 Teaspoons anise extract
2 Teaspoons ground cinnamon
1 ½ Teaspoons baking soda
1 Teaspoon ground black pepper
½ Teaspoon salt
1 Cup powdered sugar for dusting
Stir together together molasses, honey, shortening and butter over medium heat
cook and stir until creamy. remove from heat, cool and stir in eggs
Combine flour, xanthan gum, sugars, spices, baking soda and salt in large bowl . add molasses mixture and combine thoroughly. Chill at least 2 hours.
Preheat over to 325. roll dough into acorn sized balls, arrange on baking sheet 1 inch apart. bake in preheated oven 10-15 minutes. cool on rack and dust with powdered sugar.
