N4T Cooks: Wagyu Tri Tip

Name of Restaurant: PY Steakhouse, Casino Del Sol

Name of Dish: Wagyu Tri-Tip

Preparation Instructions:

Makes 6-8 people

  • 8 oz Wagyu Tri Tip
  • 4 oz mushrooms (we use lobster mushrooms and bears tooth mushrooms)
  • 2 cloves garlic, smashed
  • 4 sprigs thyme
  • 3 oz butter
  • Oil
  • Salt and pepper

Instructions:

Get cast iron (preferably) pan very hot. Season tri tip with salt and pepper. Add enough oil to the pan to coat, roughly 2 TB. Add steak to pan, do not turn until you have a nice, caramelized sear. Flip steak, cook for roughly 4 minutes, then add butter, mushrooms, garlic and thyme. Baste the steak with the butter. Remove steak and let rest 2 minutes. While steak is resting, continue cooking the mushrooms. Slice steak thinly as desired, top with mushrooms and a spoonful of the melted butter.
