Preparation Instructions:

Makes 6-8 people

Recipe: 

Soup Base

8 oz mayo kama squash

1 oz shallot

32 oz vegetable broth

2 oz butter

1 oz cider vinegar

Salt and pepper

 

Instructions:

Saute the squash and shallot together with the butter for 5-10 minutes.  Add the remaining ingrtedients and bring to a simmer.  Cook until tender and puree.  Garnish as desired.
